Chicken Killing Time

I guess the preferred euphemism is "processing".

The 15 Cornish X hens came to the end of their lives this past week. I'd been keeping them in a mobile pasture pen, also known as a chicken tractor.

My nephew Calvin came to the farm with my parents and we processed the first two -- then ate them at our 4th of July bar-b-que.

Take it away Calvin -

Three days ago, another nephew, Max was here with my dad and we killed/cleaned the rest.

  1. That's exactly what I was going to ask.

  2. They didn't have much flavor, but then again I don't eat much if any chicken. There was very little internal fat, like I'd seen in Tyson chickens, which was unexpected as they are the same breed. We grilled them whole (not brining them beforehand like I'd done with other industrial chickens) and they were nice and juicy.

There is another breed called Freedom Ranger that I'd like to try. Apparently they have more flavor. I'd do a minimum of 25 birds and would need to know who is going to take all the chickens before I went through all that work. We'll see if someone else in the family wants to go around taking orders.
